Robyn’s Malawian Chicken balls
Makes 2 servings. (Makes ± 12 balls)
This is especially nice for a lunch box.
550g of chicken mince
½ cup of white bread crumbs
2 egg whites
1 small onion grated
2 tablespoons of finely chopped parsley (coriander is also nice for a Thai taste)
garlic chopped finely (to taste)
Salt and freshly ground pepper
Mix the ingredients together and roll into small/medium sized meatballs.
Dry fry in a little water and non-stick pan.
Serving: 1 full protein & ½ carb
