Ham & Pea Soup

Makes 4 servings. Serving size 1-1½ cups.



INGREDIENTS

  • 500g if dried split peas

  • 1 medium chopped onion

  • 1 garlic clove

  • 8 cups fat-free chicken stock

  • 2 large carrots chopped

  • salt and pepper, to taste

  • 2 packets of ham

  • 2 tubs of cottage cheese


DIRECTIONS

* Wash peas and drain them. In a saucepan, saute onions and garlic in a little bit of water.

* Add peas, carrots, ham and your chicken stock, then cover the pot and let it come to a boil. * Add salt and pepper to taste.

* Once it boils you can reduce heat and cook for about two hours (beans should be very soft by then). Make sure to check the water and consistency. You may need to add hot water if it becomes too thick. 10 min before dishing up add cottage cheese, stir in well.

Serve with 2 slices of rye bread or 1 slice of brown bread.

Serving: 1 full protein & 1 full carb & greens.
