Chicken ala King

Makes 4 servings


Ingredients:

  • 8 chicken breasts

  • 2 tins of creamy mushrooms (check the fat content, must be less than 2g/100g choose the one with the least fat per 100g)

  • 400g sliced mushrooms

  • ½ sliced green Pepper

  • ½ sliced red Pepper

  • ½ sliced yellow Pepper

  • 120g pepperdews

  • 140g peas

  • 3 hands full of cut Spinach leaves

  • ½ packet of mushroom soup (must be under 2g/100g fat)

  • salt and fresh pepper to taste

  • ½ tub fat free cottage cheese(optional)


Directions:

  • Cut the chicken breasts in cubes and boil in water with a few clovers for taste. Add a little salt and pepper for taste.

  • Add the 2 tins of creamy mushroom when the chicken is tender and cooked. Pour a little water out if it is too much, you are not making a soup there must just be enough water in to make a sauce.

  • Add the peppers, mushrooms and spinach leaves.

  • Bring to a boil.

  • Mix ½ a packet of mushroom soup with water and add to the chicken, now turn the heat down and let the chicken simmer on low heat.
