Balsamic Glazed Salmon Recipe

Ingredients:

  • 2 salmon fillets (± 140g a fillet)

  • 2 cloves garlic, minced

  • 3 tablespoons balsamic vinegar

  • 2 teaspoons sweetener

  • 2 teaspoons horseradish

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Chopped fresh parsley, for garnish

Directions:

Preheat oven to 200 degrees C. Line a baking oven pan with aluminum foil.

In a small non stick pan, add a little bit of water.

Over medium heat add the garlic and cook until beginning to brown, takes ± 2 minutes, be careful not to let it burn, watch it carefully.

Add the balsamic vinegar, sweetener, horseradish, salt and pepper. Whisk and simmer until the mixture thickens, takes ± 4 minutes.

Place salmon skin-side down on the baking oven pan. Brush generously with the glaze.

Bake for 5 minutes then brush with the glaze again, bake for 5 to 10 additional minutes, until the fish flakes easily with a fork and is cooked through.

Place the fillet on a bed of rice and sprinkle with chopped parsley, serve with vegetables.

Serving for 1
