Chicken ala King
Makes 4 servings
Ingredients:
8 chicken breasts
2 tins of creamy mushrooms (check the fat content, must be less than 2g/100g choose the one with the least fat per 100g)
400g sliced mushrooms
½ sliced green Pepper
½ sliced red Pepper
½ sliced yellow Pepper
120g pepperdews
140g peas
3 hands full of cut Spinach leaves
½ packet of mushroom soup (must be under 2g/100g fat)
salt and fresh pepper to taste
½ tub fat free cottage cheese(optional)
Directions:
Cut the chicken breasts in cubes and boil in water with a few clovers for taste. Add a little salt and pepper for taste.
Add the 2 tins of creamy mushroom when the chicken is tender and cooked. Pour a little water out if it is too much, you are not making a soup there must just be enough water in to make a sauce.
Add the peppers, mushrooms and spinach leaves.
Bring to a boil.
Mix ½ a packet of mushroom soup with water and add to the chicken, now turn the heat down and let the chicken simmer on low heat.
For a creamier taste add a ½ tub of cottage cheese.
Serve with couscous or rice or pasta.
Serving: 1 full protein, 1 full carb & greens
